We purchase raw Atka mackerel, remove the scales, open it, salt it, and dry it overnight.Many people from Honshu do not eat the skin of Atka mackerel, but we think that Atka mackerel is a fish with delicious skin.Even when grilling over binchotan charcoal, we deliberately leave the skin on the outside.I don't think there is any other shop in Hakodate that makes homemade overnight dried Atka mackerel.
